Baked shrimp in lemony garlic sauce

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste. This mixture will be your marinade and sauce.
  3. In a separate bowl, place the peeled and deveined shrimp. Pour half of the marinade over the shrimp and toss to coat them evenly.
  4. Lightly grease a baking dish with cooking spray to prevent sticking. Arrange the shrimp in a single layer in the baking dish.
  5. Pour the remaining marinade over the shrimp.
  6. Bake the shrimp in the preheated oven for about 12-15 minutes or until they turn pink and are cooked through. Be careful not to overcook them, as they can become tough.
  7. Remove the baked shrimp from the oven, garnish with additional fresh parsley, if desired, and serve hot.
