Ingredients:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- Zest and juice of 1 lemon
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- Cooking spray
Instructions:
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, and chopped parsley. Season with salt and pepper to taste. This mixture will be your marinade and sauce.
- In a separate bowl, place the peeled and deveined shrimp. Pour half of the marinade over the shrimp and toss to coat them evenly.
- Lightly grease a baking dish with cooking spray to prevent sticking. Arrange the shrimp in a single layer in the baking dish.
- Pour the remaining marinade over the shrimp.
- Bake the shrimp in the preheated oven for about 12-15 minutes or until they turn pink and are cooked through. Be careful not to overcook them, as they can become tough.
- Remove the baked shrimp from the oven, garnish with additional fresh parsley, if desired, and serve hot.
