Ingredients:

– ¾ teaspoon onion powder
– ½ teaspoon black pepper

 Instructions:

1. **Prepare the Ribs:**
– If using the rib rub, mix the paprika, brown sugar, garlic powder, onion powder, and black pepper in a small bowl.
– Pat the ribs dry with paper towels. Remove the membrane from the back of the ribs if it’s still intact.

2. **Apply the Rub (Optional):**
– Rub the spice mixture all over the surface of the ribs. Let them sit for at least 30 minutes to allow the flavors to infuse.

3. **Prep for Cooking:**
– Preheat your grill to medium heat (around 300-325°F/150-160°C). Alternatively, you can use an oven preheated to the same temperature.

4. **Cooking:**
– Place the sliced onions and garlic in a large sheet of heavy-duty aluminum foil or a disposable aluminum tray.
– Lay the ribs on top of the onions and garlic.
– If using a grill: Cook the ribs indirectly by placing them on the grill away from direct heat. Close the lid and cook for about 2 to 2.5 hours, occasionally checking for doneness.
– If using an oven: Cover the ribs and tray with aluminum foil and bake for about 2 to 2.5 hours. Check for tenderness by gently pulling two rib bones apart; they should separate easily.

5. **Finishing (Optional):**
– For a caramelized finish, place the ribs on the grill over direct heat for a few minutes, basting them with your favorite BBQ sauce, and turning occasionally until slightly charred.

6. **Serve:**
