Bean and Artichoke Salad

Bean and Artichoke Salad

Ingredients
1 lg tomato, chopped
1 red bell pepper, seeded and chopped
1 small red onion, chopped
1 cup chopped parsley
1 can red kidney beans, drained & rinsed
1 can chickpeas, drained & rinsed
1 can artichoke hearts, drained & rinsed (I cut them in half)
2 T fresh lemon juice
2 T balsamic vinegar
1 1/2 t spicy brown mustard
1 t dried basil
1 t dried oregano
1 t dried thyme
1 garlic clove minced
Combine first 7 ingredients in a lg bowl.
Combine remaining ingredients in a small bowl, stir with a whisk.
Pour over bean mixture. Chill before serving.v
