bean salad

Ingredients
1 can of lentils (can also add 1/2 can of chick peas in addition)
1/2 small red onion
3 tri-colored mini peppers
1/2 cucumber
Dressing
1-2 garlic cloves
Fresh cilantro or substitute parsley
3 Tbsp to 1/4 cup olive or avocado oil
2 Tbsp lemon or lime juice
1 tsp maple syrup
Zest of 1 lime
Juice of 1/2 fresh lime
1/4 tsp turmeric
Kosher or Sea salt and fresh ground pepper to taste
1. Rinse and drain lentils
2. Dice onion, peppers, and cucumber
3. Chop parsley or cilantro
4. Make dressing with remaining ingredients and wisk
5. Add in diced veggies and lentils
6. Mix and Eat!
