big ole plate of nachos

I didn’t follow a recipe so season with your heart I made it in a cooking blender but otherwise cook the cauliflower/ cashews in a pot then take some of that water to the blender and add everything else then blend
1 head of cauliflower
1.5-2 cups of water
Garlic powder or garlic, salt, and pepper to your taste
1.5 tbsp mushroom seasoning(just dried mushrooms blended into powder I literally add it to everything)
1 tbsp white miso
A squirt of Lemon juice
A good splash of Apple cider vinegar
1/4 to 1/2 cup nutritional yeast
Small handful of raw cashews (optional, worked great without)
1tbsp cornstarch to thicken if needed
(I think that is everything I used)
Toppings: beyond meat ground, sautéed onions, taco seasoning, yellow bell pepper, green onion, tomato.
