Black Bean Burgers
Ingredients:
- 2 cans (15 ounces each) black beans, drained and rinsed
- 1/2 cup bread crumbs (you can use whole wheat or gluten-free breadcrumbs)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and black pepper to taste
- 1 egg, beaten (for binding, omit if making vegan)
- 1 tablespoon olive oil (for cooking)
- Burger buns
- Toppings of your choice: lettuce, tomato, avocado, cheese (vegan or regular), onion slices, etc.
Instructions:
- Mash the Beans: In a large mixing bowl, mash the black beans using a fork or potato masher. Leave some beans partially intact for texture.
- Add Ingredients: Add the bread crumbs, chopped onion, minced garlic, ground cumin, chili powder, paprika, cayenne pepper (if using), salt, black pepper, and beaten egg (if using) to the mashed black beans. Mix until everything is well combined. If the mixture feels too wet, add more bread crumbs; if it’s too dry, add a little water or olive oil.
- Form Patties: Divide the mixture into equal portions and shape them into burger patties. Make sure they’re compact enough to hold their shape but not too dense.
- Cook the Patties: Heat the olive oil in a skillet over medium heat. Once the oil is hot, carefully place the patties in the skillet. Cook for about 4-5 minutes on each side, or until they are nicely browned and heated through. Make sure to flip them gently to avoid breaking.
- Assemble Burgers: Toast the burger buns if desired. Place a black bean patty on each bun and add your favorite toppings such as lettuce, tomato, avocado, cheese (if using), onion slices, and condiments of your choice.
- Serve: Serve your delicious black bean burgers immediately and enjoy!
