Blueberry muffins

Blueberry muffins

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour (or use all whole wheat flour for a heartier version)
  • 1/4 cup granulated sweetener (like Stevia, Erythritol, or Splenda)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce (or mashed banana)
  • 1/2 cup non-fat Greek yogurt (or any low-fat yogurt)
  • 1/4 cup skim milk (or any plant-based milk)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (if using frozen, don’t thaw)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly spray with cooking spray.
  2. Mix the dry ingredients:
    • In a medium-sized bowl, whisk together the whole wheat flour, all-purpose flour, sweetener, baking powder, baking soda, cinnamon (if using), and salt.
  3. Mix the wet ingredients:
    • In another bowl, combine the applesauce, Greek yogurt, skim milk, egg, and vanilla extract. Whisk until smooth and well combined.
  4. Combine wet and dry ingredients:
    • Add the wet ingredients to the dry ingredients and stir gently until just combined. Be careful not to overmix.
  5. Add the blueberries:
    • Gently fold the blueberries into the batter. If you’re using frozen blueberries, try to fold them in gently to avoid too much color bleeding into the batter.
  6. Fill the muffin tin:
    • Evenly divide the muffin batter among the muffin cups, filling each about 3/4 full.
  7. Bake:
    • Bake the muffins in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool and serve:
    • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

WW SmartPoints:

  • Approx. 3-4 SmartPoints per muffin (for one muffin, depending on your sweetener choice and portion size). You can always adjust the recipe to fit your points, such as reducing the sweetener for a lower-point version.

Tips:

  • Sweetener Options: If you’re using a different sweetener (like stevia or monk fruit), make sure to adjust the quantity since different sweeteners have different sweetness levels.
  • Add-ins: You can add a teaspoon of lemon zest to the batter for a fresh flavor, or mix in a tablespoon of flaxseed or chia seeds for added texture and nutrition.
  • Freezing: These muffins freeze well! Store them in an airtight container or freezer bag and reheat in the microwave when you’re ready to enjoy.

These Blueberry Muffins are a perfect way to satisfy your sweet tooth without going off track with your WW plan. Enjoy!
