Ingredients:
6 slices of bread (your choice: white, whole wheat, or sourdough)
4 large eggs
1/4 cup milk
1/2 cup grated cheese (cheddar, mozzarella, or a mix)
1/4 cup diced bell peppers (red, green, or yellow)
1/4 cup diced tomatoes (optional)
2 tablespoons chopped green onions or parsley
1/4 cup cooked bacon bits or diced ham (optional)
Salt and pepper to taste
Butter or cooking spray (for greasing)
Instructions:
1. Preheat Oven: Set your oven to 375°F (190°C). Grease a baking dish or line a baking tray with parchment paper.
2. Prepare the Bread:
Use slices of bread as the base. Place them on the baking tray.
3. Make the Egg Mixture:
In a bowl, whisk together the eggs, milk, salt, and pepper.
Add the diced bell peppers, tomatoes, green onions, bacon/ham (if using), and grated cheese. Mix well.
4. Assemble:
Pour the egg mixture evenly over each slice of bread, ensuring the toppings stick and cover the surface.
5. Bake:
Bake in the preheated oven for 12-15 minutes or until the egg mixture is set and slightly golden on top.
6. Serve:
Let cool slightly before serving. These are great on their own or paired with a side salad
