Ingredients (Serves 6):

  • 4 cups fresh broccoli florets (about 2 medium crowns)
  • 2 medium apples, cored and chopped (Granny Smith or Honeycrisp work best)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup raisins (optional)
  • 1/4 cup sunflower seeds or chopped nuts (e.g., walnuts or pecans)
  • 1/2 cup plain Greek yogurt (or light mayo for a richer version)
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1/2 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions:

Step 1: Prepare the Broccoli

  1. Wash the broccoli florets and chop them into small bite-sized pieces. You can also peel and slice the stalks if you prefer.

Step 2: Chop the Apples and Onion

  1. Core and chop the apples into small pieces. If you like, leave the skin on for added texture and nutrients.
  2. Finely chop the red onion for a bit of sharpness in the salad.

Step 3: Make the Dressing

  1. In a small bowl, whisk together:
    • Greek yogurt (or light mayo)
    • Apple cider vinegar
    • Honey or maple syrup
