BROWNIE MUFFINS BITES – 1 POINT PER MUFFIN

Ingredients:

  • 1 cup unsweetened applesauce
  • 1/2 cup non-fat Greek yogurt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 cup granulated sugar substitute (like Stevia or Splenda)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • Cooking spray

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Spray a mini muffin tin with cooking spray.
  2. Mix Wet Ingredients:
    • In a bowl, combine the unsweetened applesauce, non-fat Greek yogurt, and vanilla extract. Mix well.
  3. Add Dry Ingredients:
    • In a separate bowl, whisk together the cocoa powder, all-purpose flour, sugar substitute, baking soda, and a pinch of salt.
  4. Combine Mixtures:
    • Add the wet ingredients to the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fill Mini Muffin Tin:
    • Spoon the batter into the mini muffin tin, filling each cup nearly to the top.
  6. Bake:
    • Bake in the preheated oven for about 10-12 minutes or until a toothpick inserted into the center comes out with moist crumbs (not wet batter).
