Brush zucchini with oil

Ingredients:

  • 1 or more zucchini (depending on how many servings you want)
  • Olive oil or avocado oil (or any preferred oil suitable for keto)

Instructions:

  1. Preheat the Oven: If you’re roasting or grilling the zucchini, preheat the oven to around 400°F (200°C) or heat the grill.
  2. Prepare the Zucchini: Wash the zucchini thoroughly and cut off the ends. You can slice them into rounds, cut them lengthwise, or into sticks, depending on how you’d like to cook them.
  3. Brush with Oil: Pour a small amount of olive oil or avocado oil onto a plate or bowl. Using a pastry brush, lightly brush both sides of the zucchini slices with the oil. If you don’t have a brush, you can also drizzle the oil over the zucchini and rub it in with your hands.
  4. Season (Optional): For extra flavor, you can sprinkle some salt, pepper, garlic powder, or any seasoning you like. You can also add some grated Parmesan cheese for extra fat and flavor.
  5. Cook: If roasting, place the zucchini on a baking sheet and bake for about 15-20 minutes or until golden and tender, flipping halfway through. If grilling, cook for about 3-5 minutes per side, depending on thickness.
