Buffalo Cauliflower Bites

Ingredients:

  • 1 head of cauliflower, cut into bite-sized florets
  • 1/2 cup plain, fat-free Greek yogurt
  • 1/4 cup hot sauce (check the label for low-sugar options)
  • 1/4 cup light butter or margarine (such as a light buttery spread)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to your preferred level of spiciness)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions:

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper. Lightly coat it with non-stick cooking spray.
  2. In a mixing bowl, combine the Greek yogurt, hot sauce, light butter, garlic powder, paprika, cayenne pepper, salt, and pepper. Mix well to create the buffalo sauce.
  3. Dip each cauliflower floret into the buffalo sauce, ensuring they are well-coated, and place them on the prepared baking sheet. Leave some space between each floret.
  4. Bake in the preheated oven for 20-25 minutes, or until the cauliflower is tender and has some crispy edges.
