Ingredients:
For the Buffalo Chicken:
- 1 lb boneless, skinless chicken breast, cooked and shredded
- 1/4 cup hot sauce (adjust to taste)
- 1 tablespoon light butter or margarine
- 1 tablespoon white vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
For the Wrap:
- Large whole-grain or low-carb tortillas (choose according to your preference)
- 1 cup shredded lettuce
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled blue cheese or reduced-fat feta
- 2 tablespoons non-fat Greek yogurt or light ranch dressing
Instructions:
1. Prepare Buffalo Chicken:
- In a saucepan over medium heat, melt the light butter. Add hot sauce, white vinegar, garlic powder, onion powder, salt, and pepper.
- Stir in the shredded chicken, ensuring it is well-coated with the buffalo sauce. Cook for a few minutes until heated through.
2. Assemble the Wrap:
- Lay out a large tortilla on a flat surface.
3. Add the Buffalo Chicken:
- Place a portion of the buffalo chicken mixture in the center of the tortilla.
4. Add Toppings:
- Sprinkle shredded lettuce, halved cherry tomatoes, and crumbled blue cheese or feta over the chicken.
5. Drizzle with Dressing:
