Butterbean cassoulet

Ingredients
1 onion, finely chopped and gently cooked in a splodge of oil.
While that’s sweating, finely chop 2-3 garlic cloves.
Add to the pan with 1tsp smoked paprika, 1/4 tsp chilli flakes, 2 Bay leaves and a goodly pinch of salt and pepper.
Cook gently for 5 mins.
Add 2 tins chopped tomatoes and 2 tins butter beans.
Raise the heat and bring to the boil.
Throw in some chopped fresh or frozen spinach and bring back to the boil.
Serve.
On the table in about 20 mins.
Tomatoes were 45p a tin and beans about 60p a tin… All in all the meal probably cost £3 and with some crusty bread it fed 4
