Butternut Squash Lentil Soup

Ingredients
3 cups Butternut squash
2 small carrots
3 cloves Garlic
1 cup Red lentils
2 tsp of tomato paste
1 White onion, medium
Smoked red pepper
Canned Goods
1 cup Coconut milk, light or full-fat
4 cups Vegetable broth
Baking & Spices
2 tsp Curry powder
2tsp Oregano
2tsp of paprika
Nuts & Seeds
1 tsp CumiN
I sauté the veggies then add the squash and lentils with the vegetable broth.
Use a blender to purée the soup or if you like chunky soup that’s okay.
