Ingredients:
* 3tbs tomato paste
* 1 tsp Italian seasoning
* 1 tsp of dried oregano
* 1 tsp of dried parsley
* 2 tbs garlic paste (can use minced)
* 2 large potatoes – cubed
* 1 large carrot – diced
* 1 large red onion – finely diced
* 2 celery sticks – diced
* 6 cups water + 1 1/2 vegetable bouillon cubes
* 6 cups cabbage shredded
* 3 tbs olive oil
* 1 can kidney beans – drained
* 1 tbs salt
* 1 tbs pepper
Instructions:
1. Turn stove on medium-high heat and place large pot on burner. Add olive oil.
2. Add diced onion to pot and cook until translucent.
3. Add celery and carrot to pot and cook until tender. About 5 minutes. Add garlic for 1 minute.
4. Add Italian seasoning to veggies and mix. Add cabbage to pot and mix.
5. Cook for 5 minutes. Stirring frequently so cabbage softens evenly.
6. Add water. tomato paste, and potatoes to pot and mix. Bring to a boil. (Once boiling add bouillon cubes.)
7. Add drained kidney beans, oregano, and parsley. Cook for 10 minutes
8. Serve and enjoy!
