Ingredients

  • 1 lb ground beef (or ground pork, turkey, or a mix)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 small head of cabbage, chopped
  • 1 can (14 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup beef or chicken broth
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter
  • Fresh parsley for garnish (optional)

 

Instructions

  1. Cook the meat: Heat the olive oil or butter in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks. Drain excess fat if necessary.
  2. Sauté the aromatics: Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent and fragrant, about 3-4 minutes.
  3. Add the cabbage: Stir in the chopped cabbage, and cook for about 5 minutes, until it starts to soften.
  4. Make the sauce: Add the diced tomatoes, tomato paste, and broth to the skillet. Stir well to combine. Season with smoked paprika, oregano, cumin, salt, and pepper.
  5. Simmer: Reduce the heat to low, cover the skillet, and let the mixture simmer for 20-25 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded together.
  6. Serve: Garnish with fresh parsley if desired and serve hot.
