2 Sticks of Butter (unslated)
Step 1
Place a pan over medium heat. Add the butter and allow it to melt. Once melted, lower the temperature to medium-low and wait for the butter to start foaming on top.
Step 2
Continue stirring and scrape the sides often – this is very important.
Step 3
Wait for the butter to brown to your desired level, then remove it from the heat and allow it to cool for 5 minutes.
Step 4
Pour the butter from the pan into a very large glass cup. Scrape all the pieces from the pan – those are the tasty bits!
Step 5
Place the glass cup in the fridge for 15 minutes. Whip the butter using a hand mixer until creamy (about 2-3 minutes).
Then, fill silicone molds with the butter and place them in the fridge for an hour. Enjoy!
💡Tips
1. Whip It Well
When it comes time to whip the butter, don’t rush. Start your mixer on low speed to break up the butter, then gradually increase to medium-high.
Whip for 2-3 minutes, or until the butter is light and fluffy. You’ll see it change color slightly, becoming a paler shade.
Don’t overwhip though, as this can cause the butter to separate (unfortunately I learned that the hard way).
2.Using a Mold
Silicone molds are ideal because they’re flexible, so it easy to pop out the butter bites once they’re set.
If you don’t have silicone molds, you can use an ice cube tray or even small paper cups. Not ideal but still works.
