Cauliflower Cheese
Ingredients:
  • 1 large cauliflower, leaves removed and broken into florets
  • 500ml whole milk
  • 4 tablespoons all-purpose flour
  • 50g unsalted butter
  • 150g strong cheddar cheese, grated (divided)
  • Salt and black pepper to taste
  • 2-3 tablespoons breadcrumbs (optional, for added crunch)
Instructions:
  1. Prepare Cauliflower:Bring a pot of salted water to a boil.
    Boil the cauliflower florets for about 5 minutes until slightly tender.
    Drain the cauliflower and set aside.
  2. Make Cheese Sauce:In the same pot, melt the butter over medium heat.
    Add the flour and whisk continuously until it forms a smooth paste (roux).
    Gradually pour in the milk while whisking to avoid lumps.
    Continue whisking until the sauce thickens and becomes smooth.
    Add 100g of grated cheddar cheese to the sauce, stirring until melted and well combined.
    Season the sauce with salt and black pepper to taste. Cook for an additional 5 minutes on medium heat, ensuring the sauce is smooth and flavorful.
  3. Combine Cauliflower and Sauce:Place the blanched cauliflower in the air fryer basket.
    Pour the cheese sauce over the cauliflower, ensuring it’s evenly coated.
  4. Air Fry:Set the air fryer to 180 degrees Celsius (360 degrees Fahrenheit).
    Cook for 15-20 minutes, or until the cauliflower is golden and slightly crispy on the edges.
    Optional: Sprinkle the remaining grated cheddar cheese and breadcrumbs over the cauliflower during the last 5 minutes of cooking for an extra cheesy and crispy topping.
  5. Serve:Once done, remove the cauliflower cheese from the air fryer.
    Garnish with fresh herbs like chopped parsley or chives, if desired.
