Cheesy Garlic Butter Mushroom Stuffed Chicken…

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 8 oz cremini mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil. Sauté the mushrooms and garlic until they are tender and any excess moisture has evaporated. Remove from heat and set aside.
  3. Butterfly each chicken breast by slicing horizontally through the thickest part, without cutting all the way through. Open the chicken breasts like a book.
  4. Season the inside of each chicken breast with salt, pepper, and dried thyme.
  5. Divide the sautéed mushroom mixture evenly among the chicken breasts, spreading it over one side of each breast.
  6. Sprinkle mozzarella and Parmesan cheese over the mushroom mixture.
  7. Fold the other side of the chicken breast over the filling, creating a stuffed chicken breast.
  8. In the same skillet, melt butter over medium heat. Brown each stuffed chicken breast for 2-3 minutes on each side.
  9. Transfer the browned chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  10. Garnish with fresh parsley before serving.
