Cheesy Keto Taco Soup 😋

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1 tablespoon olive oil (optional, if needed for cooking lean meat)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet keto-friendly taco seasoning (or homemade)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (4 oz) diced green chilies (optional for extra heat)
  • 1 cup beef broth (or chicken broth)
  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1 1/2 cups shredded cheddar cheese (plus extra for topping)
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, avocado, jalapeños, or green onions

Instructions:

  1. Cook the ground beef:
    • In a large pot or Dutch oven, heat the olive oil over medium heat (if using lean ground beef or turkey).
    • Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked (about 5-7 minutes). Drain any excess fat.
  2. Sauté the vegetables:
    • Add the diced onion and minced garlic to the pot and sauté for 2-3 minutes, until softened and fragrant.
  3. Add the taco seasoning:
