Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper until evenly coated. Spread the cauliflower in a single layer on the prepared baking sheet.

- Make the Chipotle Cheese Sauce: While the cauliflower is roasting, combine the soaked cashews, almond milk, nutritional yeast, lemon juice, chipotle peppers, garlic powder, and salt in a blender. Blend until smooth and creamy. Adjust the spice level by adding more chipotle peppers if desired. If the sauce is too thick, add a little more almond milk to reach your desired consistency.
- Assemble the Nachos: Once the cauliflower is roasted, remove it from the oven. On a large platter or baking sheet, layer the roasted cauliflower as the base. Drizzle the chipotle cheese sauce generously over the cauliflower. Top with black beans, cherry tomatoes, avocado, red onion, jalapeños, and any other desired toppings.
