Chocolate Chip and Walnut Cookies

INGREDIENTS:
1 cup of Walnuts(or whatever but of choice)
1 12oz Package of semisweet vegan chocolate chips
1 cup Vegan Butter (room temperature)
2 Chickpea Eggs (Just Egg) * 3 tablespoons of Just Egg is the equivalent to one chicken egg so you need to double as the recipe requires two eggs. Keep in mind you can use egg replacer as well.
3.4 oz Package of Instant Vanilla Pudding
2 1/4 All Purpose Flour
1 teaspoon of baking soda
1 teaspoon of salt
1 1/2 teaspoons of Vanilla Extract
3/4 cup of Dark Brown Sugar
3/4 cup of Sugar Cane
INSTRUCTIONS:
1.)Add dry ingredients (baking soda, flour, and salt) into a bowl and whisk until thoroughly combined.
2.) In a second bowl add your butter and sugar then use a mixer and mix on high speed for 2 minutes until it’s light and fluffy and the sugar is dissolved. Scrap down your bowl making sure you don’t leave anything behind.
3.) Next, add your pudding mix and Just Egg, then add the vanilla extract . Mix on low speed until everything is combined. Scrap down your bowl again making sure you get the bottom as well.
4.) Now add your dry ingredients. Mix the ingredients on a low speed until everything is combined. Then you can add the chocolate chips and walnuts. Don’t use a mixer for the last part just a spatula and fold in the chocolate chips and walnuts (or nuts of choice) until combined.
5.) Line two cookie sheets with parchment paper. Use a small cookie scoop to scoop out the cookies on to the parchment paper and cookie sheet. Make sure they’re far enough so they can brown on each side. Once you’ve filled the sheets put them in the refrigerator for 10 minutes that way when you cook them they hold their structure better.
5.) Set the oven at 375 degrees and bake for 9 to 10 minutes. Let cool for 3 to 5 minutes. Enjoy!
***Note:This dough freezes nicely; just form into balls, place on a cookie sheet, and put in the freezer. When frozen, pop them in an airtight container where they will last for up to 3 months. There’s no need to thaw when ready to bake; just add a minute or two to the baking time.
