Chuck roast, potatoes and some carrots!!

Ingredients:

  • 1 chuck roast (approximately 3-4 pounds)
  • 4-5 medium-sized potatoes, peeled and cut into chunks
  • 4-5 medium-sized carrots, peeled and cut into chunks
  • 1 medium-sized onion, diced
  • 4 cloves of garlic, minced
  • 2 cups beef broth
  • 2 tablespoons vegetable oil
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 325°F (163°C).
  2. Season the chuck roast generously with salt and pepper on all sides.
  3. Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat. Once the oil is hot, add the chuck roast and sear it on all sides until browned. This will help seal in the juices and add flavor.
  4. Remove the seared chuck roast from the pot and set it aside. In the same pot, add the diced onion and minced garlic. Sauté them until the onion becomes translucent and the garlic is fragrant.
  5. Add the tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and paprika to the pot. Stir everything together and cook for about a minute to allow the flavors to meld.
  6. Pour in the beef broth and scrape the bottom of the pot to release any browned bits. These browned bits are packed with flavor.
  7. Return the chuck roast to the pot, nestling it in the liquid. Add the potatoes and carrots around the roast.
  8. Cover the pot with a lid and transfer it to the preheated oven. Let it cook for about 3-4 hours or until the chuck roast becomes tender and easily pulls apart with a fork.
  9. After the cooking time is up, carefully remove the pot from the oven. Use a fork to check the tenderness of the meat. If it’s tender enough, remove the chuck roast and let it rest for a few minutes before slicing or shredding.
  10. Serve the chuck roast, potatoes, and carrots together, drizzling some of the flavorful cooking liquid over the top. You can also garnish with freshly chopped parsley for added freshness.
