
Keto Cinnamons Rolls
Ingredients:
For the dough:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol or preferred keto-friendly sweetener
- 1 tablespoon baking powder
- 1/2 teaspoon xanthan gum (optional, helps with texture)
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup melted butter or coconut oil
- 1 teaspoon vanilla extract
For the filling:
- 1/4 cup melted butter
- 1/4 cup granulated erythritol or preferred keto-friendly sweetener
- 2 tablespoons ground cinnamon
For the cream cheese frosting:
- 4 oz cream cheese, softened
- 2 tablespoons powdered erythritol or preferred keto-friendly sweetener
- 1/2 teaspoon vanilla extract
- 2-4 tablespoons heavy cream or almond milk (adjust for desired consistency)
Instructions:
- Preheat your oven to 350°F (175°C). Prepare a baking dish with parchment paper or grease it with butter or oil.
- In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, xanthan gum, and salt.
- Add in the eggs, melted butter, and vanilla extract to the dry ingredients. Mix until a dough forms. If the dough is too dry, you can add a little more melted butter or a splash of almond milk.
- Place the dough between two sheets of parchment paper and roll it out into a rectangle, about 1/4 inch thick.
- In a small bowl, mix together the melted butter, erythritol, and ground cinnamon for the filling.
- Spread the cinnamon filling evenly over the dough rectangle.
- Carefully roll up the dough from the long side, creating a log.
- Slice the log into 8-10 even pieces, depending on how thick you want your cinnamon rolls.
- Place the cinnamon rolls in the prepared baking dish, leaving a little space between each roll.
- Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and cooked through.
- While the rolls are baking, prepare the cream cheese frosting. In a bowl, beat together the softened cream cheese, powdered erythritol, vanilla extract, and heavy cream until smooth and creamy.
- Once the cinnamon rolls are done baking, remove them from the oven and let them cool for a few minutes.
