Coconut Curry Garbanzo bean Stew

Ingredients
2 Cans of Garbonzo Beans (I’d usually use fresh/dry but time was a huge factor)
1 1/2 cups of Coconut Cream
1 medium onion diced
1/2 of Bell Pepper
Fresh Cilantro
1 small tomato
2 cups of chopped kale
All of the spices are to taste
Curry
Thyme
Basil
Garlic
Black Pepper
Sea Salt
•In a large Pot Sauté Onions and peppers.
•Next add in coconut cream (give a good mix)
•Add in Kale & Garbanzo Beans
•I added some air fried tofu (optional)
•add in spices to taste
Simmer for about 10 minutes on medium
•Add cilantro & tomato
•simmer on low until all the veggies are tender
• Serve with Rice or Barley..
