Ingredients
Carrots
Broccoli
Chopped Corn
Cauliflower
Red Peppers & Green Peppers
Onions Garlic  Italian Season
Sauce:
2 tsp olive oil or coconut oil
1 can coconut milk
1/3 cup vegetable liquid stock or water
1 tsp cayenne pepper
2 tsp brown mustard seeds
1 tbs cumin
1 tbs turmeric
1 tsp curry powder
Choice of seasoning salt & garlic powder to taste
Optional: 400g can chickpeas
I served this stir-fry on a bowl of rice, but here are some healthier substitutes, suggested by you all:
Quinoa
Zucchini Noodles
Cauliflower Rice
Gluten Free Pita
