Ingredients:
4 ears of sweet corn (I left it all raw and saved bigger pieces to garnish)
1 roasted anaheim pepper, skin & seeds removed
1 tomatillo (leaving some dices for garnish)
2 medium potatoes, boiled
1/2 cup of sauteed diced yellow onion
3 Tbsp nutritional yeast
3-4 cups of veggie stock
Salt and pepper to taste
Cayenne pepper to taste
Garnishes:
Corn kernals
Diced tomatillo
Thinly sliced green onions
Pumpkin seeds
Cayenne pepper
Lime wedge for serving
I put everything in the food processor except the stock and garnishes and blended while adding stock until I got the consistency I was looking for. It made about 6 cups so I’m going to freeze some.
