Ingredients
Fresh green beans (enough to fill a large cast iron skillet)
Yellow onion
Yukon gold potatoes (4-5), cut into chunks
Garlic
Veggie broth
Salt & pepper
Smoked paprika
Trim the green beans. Sauté the onion in vegan butter or olive oil until translucent. Add garlic (I use two cloves), and sauté for about 30 seconds. Add in beans, potatoes, spices and broth. SImmer about an hour or so until tender.
I don’t measure seasonings, just add a dash here and there until you like it!
