
Cranberry And Orange Scones Recipe
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup sugar or sugar substitute
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup cold unsalted butter, diced
- 1/2 cup dried cranberries
- Zest of one orange
- 3/4 cup low-fat buttermilk
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold butter to the dry ingredients and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the dried cranberries and orange zest.
- In a separate bowl, combine the buttermilk and vanilla extract.
- Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Gently mix until just combined. Be careful not to overmix, as this can make the scones dense.
- Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
- Pat the dough into a circle about 1 inch thick. Use a round cutter to cut out scones and place them on the prepared baking sheet.
- Bake for 12-15 minutes or until the scones are golden brown.
- Allow the scones to cool on a wire rack before serving.
