  • 8 oz vegan sausage, sliced (such as Beyond Meat or Field Roast)
  • 8 oz pasta (such as penne or fusilli)
  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup vegetable broth
  • 1/2 cup unsweetened non-dairy milk (such as almond milk or oat milk)
  • 2 tbsp nutritional yeast
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)
