Ingredients
7.8 ounces of Bucatini or Spaghetti Pasta
3.5 ounces of Grateable and meltable vegan cheese (preferably, use one that closely resembles pecorino cheese, but you can use any one of your choice though the results might not be as tasty!)
5.3 ounces of Vegan Pancetta/Guanciale (It’s like a thick bacon that you are able to cut in cubes, not sure which brands available in the US)
2 tablespoons of Rapeseed or Sunflower oil
7.1 ounces of Vegan Egg Yolk (Just Egg in the US)
1 teaspoon of Kala Namak Salt (This gives the super important eggy taste)
1 teaspoon of Black Pepper
3 tablespoons of Kosher Salt
Preparation:
1. Start by boiling the water for the pasta in a tall pot.
2. Add the 3 tablespoons of Kosher Salt directly into the boiling water and wait for it to melt.
3. Add the 7.8 ounces of Bucatini/Spaghetti pasta to the boiling water and wait for it to cook fully according to the package instructions.
4. While the pasta is cooking, set a pan over medium-high heat and add the 2 tablespoons of Rapeseed/Sunflower oil.
5. When the oil has heated up to the point it starts forming ripples on its surface, add the 5.3 ounces of Vegan Pancetta/Guanciale.
6. Fry the Pancetta/Guanciale cubes until crispy, but be careful not to burn it. Once done, turn the fire off and let the pan rest on the stove.
7. Take a small bowl and mix in the 7.1 ounces of Vegan Egg Yolks with the grated 3.5 ounces of Vegan Cheese, the 1 teaspoon of Kala Namak salt, and the 1 teaspoon of Black Pepper; this will be your Yolk Mix.
8. Once the pasta is done, strain it but leave a drinking cup worth of pasta water on the side; you’ll need it later on to water down the sauce if it gets too thick.
9. Put the strained pasta in the pan with the recently fried Pancetta/Guanciale and give it a good stir.
10. Add the Yolk Mix into the pan with the pasta and the Pancetta/Guanciale and give it another good stir.
11. Add the remaining pasta water only if you want the sauce to be a bit more runny.
12. Serve in a plate with some of the same vegan grated cheese you used for the Yolk Mix on top and you’re good to go!
