I prep everything ahead of time so assembling is easy.
*Chopped cilantro
*Diced tomatoes
*Chopped onions
*2 hard taco shells
*Vegan cheese (make your own from potatoes, onions, carrots, cashews and nutritional yeast or buy diaya packets if short on time)
*A vegan meat substitute, (I buy tvp off brand in bulk and season it myself to reduce cost but you can use any ground beef substitute you prefer)
*A can of refried beans(be careful not to get the ones with lard look for vegetarian or fat free)
*Any other toppings you want, like jalapeños, olives salsa, avocado, vegan sour cream…. the choice is yours.
Once you have everything ready
Grab a jumbo burrito shell and spread about 2tbsp of refried beans, next add about 1/4cup of the faux meat, then add or sub jalapeños, top with your nacho cheese. Next add a taco shell, then layer your lettuce, onion, tomato and cilantro. Here’s where you would add any additional toppings you choose, olives, guac, salsa ect. Then put your second hard shell on top and carefully wrap 5 times folding each fold over the next in a clockwise motion. I spray the bottom with cooking spray, set a plate on top to keep it from unfolding and cook it on medium heat for about 4-5 mins (watch for that golden crisp) then when i flip it i turn up the heat just a bit so the top crisps a little faster without making the cold stuff warm and gross.

I’ve made all kinds of substitutions so don’t feel like it has to be this way. Just think of it as a star shaped burrito with the fillings of your chioce!
Also….
Thats with 1 can of refried beans as well and about half a head of lettuce, 1 tomato and 1 bundle of cilantro.
If you’re using diaya cheese packets, you would need 2 for that many but I usually make a batch of mac n cheese the day prior and use the remaining cheese for the crunchwraps.
