  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 potatoes, peeled and cubed (optional)
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • 1 cup coconut milk
  • Fresh cilantro leaves for garnish

  1. Heat oil in a large pot or Dutch oven over medium heat. Add chopped onions and sauté until they turn translucent.
  2. Add minced garlic and grated ginger to the pot. Cook for another couple of minutes until fragrant.
  3. Add the beef cubes to the pot and brown them on all sides.
  4. Once the beef is browned, add chopped tomatoes, curry powder, ground cumin, ground coriander, turmeric powder, chili powder, and salt to taste. Stir well to coat the beef with the spices.
  5. If you’re adding potatoes, this is the time to add them to the pot.
  6. Pour in the coconut milk and stir to combine. Bring the curry to a simmer.
  7. Cover the pot and let it simmer gently for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together. Stir occasionally and add a splash of water if the curry becomes too thick.
  8. Once the beef is tender, taste and adjust the seasoning if needed.
  9. Garnish with fresh cilantro leaves before serving.
  10. Serve hot with steamed rice or your favorite bread.
