I made some okra stew today with chicken, sausage, shrimp and crawfish tails, onion and green peppers!
Ingredients:
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1 pound okra, sliced
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 pound large shrimp, peeled and deveined
1 pound crawfish tails
1 can diced tomatoes
4 cups chicken broth
1 teaspoon Cajun seasoning
Salt and pepper, to taste
Cooked rice, for serving
Instructions:
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
Add the okra, chicken, shrimp, crawfish tails, tomatoes, chicken broth, and Cajun seasoning to the pot. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
Season the stew with salt and pepper, to taste.
Serve the stew over cooked rice. Enjoy!
