Ingredients:
- 4 ounces of high-quality semi-sweet chocolate
- 1/2 cup (1 stick) unsalted butter
- 1 cup powdered sugar
- 2 large eggs
- 2 egg yolks
- 1 teaspoon vanilla extract
- 6 tablespoons all-purpose flour
- Optional: vanilla ice cream or whipped cream for serving
Instructions:
- Preheat your oven to 425°F (220°C). Grease 4 ramekins or small oven-safe bowls with butter and dust with cocoa powder or flour. This prevents the cakes from sticking.
- In a microwave-safe bowl, melt the chocolate and butter together in 30-second intervals, stirring in between until smooth. Alternatively, you can melt them over a double boiler on the stove. Let the mixture cool slightly.
- In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined.
- Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth.
- Gently fold in the flour until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins.
- Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.
- Remove from the oven and let the cakes cool in the ramekins for 1-2 minutes.
- Carefully run a knife around the edges of the cakes to loosen them from the ramekins. Place a plate upside down over each ramekin, then invert the cakes onto the plates.
