DETOX KETO SOUTHWEST CHICKEN SOUP
Ingredients:
- 1 pound boneless, skinless chicken breasts, cooked and shredded
- 4 cups low-sodium chicken broth
- 1 can (14 ounces) diced tomatoes, undrained
- 1 cup cauliflower rice
- 1 cup diced bell peppers (assorted colors)
- 1 cup diced zucchini
- 1 cup chopped celery
- 1 cup chopped onion
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro and sliced avocado for garnish
Instructions:
- In a large pot, heat olive oil over medium heat. Add chopped onions, celery, and minced garlic. Sauté until vegetables are softened.
- Stir in ground cumin, chili powder, smoked paprika, dried oregano, salt, and pepper. Cook for an additional 1-2 minutes until the spices are fragrant.
- Add diced tomatoes, chicken broth, shredded chicken, cauliflower rice, bell peppers, and zucchini to the pot. Bring the mixture to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld.
- Adjust the seasoning to taste, and squeeze the juice of one lime into the soup. Stir well.
- Before serving, garnish each bowl with fresh cilantro and sliced avocado.
