dry beans and farro

– About 1 cup beans (I used the dry black beans I had on hand)
– About 1 cup rice (I used the farro I had in the cabinet)
– 1 diced zucchini
– 1 diced yellow squash
– 1 (15 oz) can crushed tomatoes
– 1 small yellow onion
– fresh garlic, minced (I love garlic and used about 6 cloves!)
– garlic salt
– black pepper
– crushed red pepper
– onion powder
– garlic powder
– paprika
– Montreal steak seasoning
Optional: SO Delicious Mexican Cheese Shreds (melts nicely!)
I sautéed the onion until translucent, using water not oil. Then added the zucchini, squash and garlic. After sautéing that for a few minutes, added the rest of the ingredients and spices and cooked until warmed through about 10 mins. I added a bit of the vegan cheese when serving. Still great without! Enjoy!
Since I used dry beans and farro, I had soaked and cooked those up the day before
