Ingredients:
- 1 French baguette or Italian bread
- 1 whole head of garlic
- 2-3 tablespoons olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter, softened
- 1 tablespoon fresh parsley, chopped (optional)
- Salt and pepper to taste
Instructions:
- Roast the Garlic:
- Preheat your oven to 400°F (200°C).
- Cut the top off the head of garlic to expose the cloves, leaving the skin intact.
- Place the garlic head on a piece of aluminum foil, drizzle it with a little olive oil, and wrap it in the foil.
- Bake in the preheated oven for about 30-40 minutes, or until the garlic is soft and fragrant. Let it cool slightly before using.
- Prepare the Bread:
- Slice the French baguette or Italian bread in half horizontally.
- Make the Garlic Butter:
- Squeeze the roasted garlic cloves out of their skins and mash them with a fork in a small bowl.
- Mix the mashed garlic with the softened butter and a pinch of salt and pepper.
- Spread the Garlic Butter:
- Spread the roasted garlic butter evenly over the cut sides of the bread.
- Add the Cheese:
- Sprinkle the shredded mozzarella cheese evenly over the garlic butter on both halves of the bread.
- Follow this with the grated Parmesan cheese.
- Bake the Bread:
- Place the bread halves on a baking sheet and put it in the preheated oven.
- Broil Until Golden Brown:
- Turn on the broiler and place the bread under the broiler for 2-3 minutes, or until the cheese is melted and bubbly, and the bread is golden brown. Be sure to watch it closely to prevent burning.
- Garnish:
- Remove from the oven, and if desired, sprinkle fresh chopped parsley over the top for some extra flavor and color.
- Slice and Serve:
- Slice the roasted garlic cheese bread into individual servings and serve it while it’s warm.
