Ingredients
2 zucchinis grated,
3 carrots grated,
2 small onions grated or finely chopped,
sometimes I have added half a can of corn kernels too
salt, let it sit for a while, and squeeze out excess juice
Add ½ to 1 teaspoon turmeric and
Enough flour to firm (start with 4 tablespoons) and add more if you can’t shape them.
In a frypan add oil and shape the mixture into a fritter and fry.
I noticed you have to keep adding oil or they will burn.
I’ve never baked them before but I will try next time
