Egg Roll in a Bowl

This Egg Roll In A Bowl is a keto twist on your favorite Chinese takeout egg rolls. Only on a keto diet can egg rolls be a perfectly healthy, protein-filled lunch or dinner!

INGREDIENTS

  • 1 ½ lbs. Ground pork
  • 1 lb. Coleslaw mix
  • 1 tbsp. Sesame oil
  • 1 Small onion chopped
  • ⅓ c. Soy sauce
  • ¼ c. Chicken broth
  • 3 Cloves garlic minced
  • Salt and pepper to taste
  • 3 Green onion stalks chopped

INSTRUCTIONS

  • Heat 1 tablespoon of sesame oil in a skillet over medium high heat. Once the skillet has come to temperature, add the chopped onion.
  • Saute the onion for 2-3 minutes until it begins to brown.
  • Add in the minced garlic, and stir constantly, cooking for 30 seconds.
  • Place the ground pork in the skillet, and cook until it is browned. Mix it often to incorporate the onions and garlic.
  • Once the pork has browned, add the bag of coleslaw mix to the skillet. Stir well to mix the pork in with the vegetables.
  • Add ⅓ cup of soy sauce to the skillet.
  • Pour ¼ of a cup of chicken broth into the skillet.
  • Stir all of the ingredients and cook for an additional 1-2 minutes, stirring often.
  • Serve with fresh chopped green onions on top.
