This Egg Roll In A Bowl is a keto twist on your favorite Chinese takeout egg rolls. Only on a keto diet can egg rolls be a perfectly healthy, protein-filled lunch or dinner!
INGREDIENTS
- 1 ½ lbs. Ground pork
- 1 lb. Coleslaw mix
- 1 tbsp. Sesame oil
- 1 Small onion chopped
- ⅓ c. Soy sauce
- ¼ c. Chicken broth
- 3 Cloves garlic minced
- Salt and pepper to taste
- 3 Green onion stalks chopped
INSTRUCTIONS
- Heat 1 tablespoon of sesame oil in a skillet over medium high heat. Once the skillet has come to temperature, add the chopped onion.
- Saute the onion for 2-3 minutes until it begins to brown.
- Add in the minced garlic, and stir constantly, cooking for 30 seconds.
- Place the ground pork in the skillet, and cook until it is browned. Mix it often to incorporate the onions and garlic.
- Once the pork has browned, add the bag of coleslaw mix to the skillet. Stir well to mix the pork in with the vegetables.
- Add ⅓ cup of soy sauce to the skillet.
- Pour ¼ of a cup of chicken broth into the skillet.
- Stir all of the ingredients and cook for an additional 1-2 minutes, stirring often.
- Serve with fresh chopped green onions on top.
