Ingredients
2 – 15 oz cans of garbanzo beans (drained but keep the aquafaba! It’s liquid gold!!)
2 – small shallots
Heaping TB minced garlic
Fist full of fresh parsley
2 TB Raw sesame seeds
1-2 TB lemon juice
1 TB Cumin
6-8 TB flour
Panko and oil for frying
Salt and pepper
Pulse the beans in the food processor until mealy (don’t go so far that they’re smooth) I had to batch mine bc my processor is very small
Separately pulse shallot, garlic, lemon juice, parsley and spices. Fold into beans.
Fold in flour- start with a small QTY and add as needed. Test to see if they hold together when you make a patty. If not, more flour.
Heat oil. Make Pattie’s out of mix, smoosh each flat side into Panko (it’ll be soft enough to hold the breadcrumbs without doing a traditional dry/wet/dry coating)
Straight into the oil- fry until brown
Make a little salad with lettuce, tomatoes, red onion and cucumber
Toss in lemon vinaigrette
Heat your pita and assemble, finishing off with tahini.
