Fruity Tapioca Jelly Drink

Ingredients:

  • For the tapioca pearls (boba):
    • 1/2 cup tapioca pearls
    • 4 cups water
    • 1/4 cup brown sugar (for syrup)
    • 1/4 cup water (for syrup)
  • For the fruity jelly:
    • 1 cup fruit juice (mango, passion fruit, or any juice of your choice)
    • 1 tbsp agar-agar powder (vegetarian jelly setting agent)
    • 2 tbsp sugar (optional, depending on the sweetness of your juice)
  • For the fruity drink:
    • 2 cups fruit juice (you can mix different juices like mango, pineapple, or strawberry)
    • 1/2 cup coconut milk (optional, for creaminess)
    • Ice cubes (optional, for extra chill)

Instructions:

  1. Make the tapioca pearls:
    • Boil 4 cups of water in a pot. Once boiling, add the tapioca pearls.
    • Stir gently to prevent sticking, and cook for about 15-20 minutes (or according to the package instructions). Once cooked, the pearls should become soft and chewy.
    • Remove from heat and let them sit for 10 minutes. Drain the tapioca pearls and rinse them under cold water.
    • In a small saucepan, mix 1/4 cup water with the brown sugar to make the syrup. Bring it to a simmer until the sugar is fully dissolved.
    • Pour the syrup over the tapioca pearls and mix well. Set aside.
  2. Prepare the fruity jelly:
    • In a small saucepan, combine the fruit juice, agar-agar powder, and sugar (if using).
    • Bring to a boil while stirring frequently, and let it boil for 2-3 minutes until the agar-agar powder is fully dissolved.
    • Pour the mixture into a shallow dish or silicone mold and let it cool to room temperature. Once cooled, refrigerate for about 30 minutes to set.
    • Once set, cut the jelly into small cubes or strips.
  3. Prepare the fruity drink:
    • In a large glass, mix your choice of fruit juice with coconut milk (optional). Stir well.
    • Add ice cubes if you like it extra cold.
  4. Assemble the drink:
    • Add a few tablespoons of the tapioca pearls to the bottom of a tall glass.
    • Layer in some of the fruity jelly cubes.
    • Pour the fruity drink mixture over the pearls and jelly.
  5. Serve:
    • Stir the drink with a wide straw or spoon to mix the tapioca pearls, jelly, and fruit juice.
    • Enjoy the refreshing, fruity, and chewy tapioca jelly drink!
