Garlic Mushrooms Cauliflower Skillet

Ingredients:

  • 1 medium cauliflower (cut into small florets)
  • 8 oz (about 225 g) mushrooms (sliced, button or cremini work best)
  • 4-5 garlic cloves (minced)
  • 2 tbsp olive oil (or your choice of cooking oil)
  • 1/2 tsp dried thyme (or fresh thyme if available)
  • 1/2 tsp dried rosemary (optional)
  • 1/4 tsp red pepper flakes (optional for a slight kick)
  • Salt and pepper (to taste)
  • 1 tbsp lemon juice (optional, for extra flavor)
  • Fresh parsley (for garnish)

Instructions:

  1. Prepare the cauliflower:
    • Cut the cauliflower into small florets. If you prefer, you can steam or blanch the cauliflower for a few minutes to soften it slightly before using it in the skillet.
  2. Sauté the mushrooms:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the sliced mushrooms to the skillet, stirring occasionally, and cook for about 5-7 minutes until the mushrooms release their moisture and become golden brown.
    • Remove the mushrooms from the skillet and set them aside.
  3. Cook the cauliflower:
    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the cauliflower florets, and sauté them for about 7-10 minutes, stirring occasionally, until they are tender and lightly browned.
  4. Add garlic and seasonings:
    • Add the minced garlic to the skillet with the cauliflower, stirring to combine. Cook for another 1-2 minutes, until the garlic becomes fragrant.
    • Season with thyme, rosemary, red pepper flakes (if using), salt, and pepper to taste.
  5. Combine mushrooms and cauliflower:
    • Return the cooked mushrooms to the skillet and stir everything together to mix well.
    • Continue to cook for an additional 2-3 minutes, allowing the flavors to meld.
  6. Finishing touches:
    • Squeeze fresh lemon juice over the skillet for a touch of brightness (optional).
    • Garnish with chopped fresh parsley.
