Garlic Mushrooms in Parmesan Cheese

Ingredients:

  • 16 oz (450g) fresh mushrooms, cleaned and sliced
  • 3 tablespoons vegan butter or olive oil
  • 4-5 cloves garlic, minced
  • 1/4 cup nutritional yeast (to mimic the cheesy flavor)
  • 1/4 cup almond meal or finely ground almonds
  • 1/4 cup vegetable broth
  • 1/4 cup unsweetened almond milk or any unsweetened plant-based milk
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat a large skillet over medium-high heat and add the vegan butter or olive oil.
  2. Add the minced garlic and sauté for about 1-2 minutes until it becomes fragrant but not browned.
  3. Add the sliced mushrooms to the skillet and sauté for 5-7 minutes until they become tender and release their moisture. Stir occasionally.
  4. Sprinkle the nutritional yeast and almond meal over the mushrooms and stir to coat them evenly. These ingredients will mimic the cheesy flavor and texture.
  5. Pour in the vegetable broth and almond milk, and stir well to create a creamy sauce. Allow the mixture to simmer for another 3-5 minutes, allowing the sauce to thicken.
  6. Season the dish with salt and black pepper to taste. Adjust the seasonings to your preference.
  7. Once the sauce has thickened and the mushrooms are coated, remove the skillet from heat.
  8. Serve the vegan garlic mushrooms in Parmesan cheese hot, garnished with chopped fresh parsley.
