Ingredients:
- 16 oz (450g) fresh mushrooms, cleaned and sliced
- 3 tablespoons vegan butter or olive oil
- 4-5 cloves garlic, minced
- 1/4 cup nutritional yeast (to mimic the cheesy flavor)
- 1/4 cup almond meal or finely ground almonds
- 1/4 cup vegetable broth
- 1/4 cup unsweetened almond milk or any unsweetened plant-based milk
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat a large skillet over medium-high heat and add the vegan butter or olive oil.
- Add the minced garlic and sauté for about 1-2 minutes until it becomes fragrant but not browned.
- Add the sliced mushrooms to the skillet and sauté for 5-7 minutes until they become tender and release their moisture. Stir occasionally.
- Sprinkle the nutritional yeast and almond meal over the mushrooms and stir to coat them evenly. These ingredients will mimic the cheesy flavor and texture.
- Pour in the vegetable broth and almond milk, and stir well to create a creamy sauce. Allow the mixture to simmer for another 3-5 minutes, allowing the sauce to thicken.
- Season the dish with salt and black pepper to taste. Adjust the seasonings to your preference.
- Once the sauce has thickened and the mushrooms are coated, remove the skillet from heat.
- Serve the vegan garlic mushrooms in Parmesan cheese hot, garnished with chopped fresh parsley.
