Ingredients:
- 4 large potatoes
- 1 small onion, finely chopped
- 2 eggs
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
- Sour cream or applesauce (optional, for serving)
Instructions:
- Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.
- In a large bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
- Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom of the pan.
- Take about 1/4 cup of the potato mixture and flatten it into a pancake shape with your hands. Carefully place it in the hot skillet. Repeat with more of the mixture, leaving some space between the pancakes.
- Cook the pancakes for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat to prevent them from burning.
- Once cooked, transfer the pancakes to a plate lined with paper towels to drain any excess oil. Continue frying the remaining pancakes in batches until all the mixture is used.
- Serve the German Potato Pancakes warm with sour cream or applesauce on the side, if desired.
