German Potato Pancakes

Ingredients:

  • 4 large potatoes
  • 1 small onion, finely chopped
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying
  • Sour cream or applesauce (optional, for serving)

Instructions:

  1. Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out any excess moisture.
  2. In a large bowl, combine the grated potatoes, chopped onion, eggs, flour, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  3. Heat a large skillet over medium heat and add enough vegetable oil to cover the bottom of the pan.
  4. Take about 1/4 cup of the potato mixture and flatten it into a pancake shape with your hands. Carefully place it in the hot skillet. Repeat with more of the mixture, leaving some space between the pancakes.
  5. Cook the pancakes for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat to prevent them from burning.
  6. Once cooked, transfer the pancakes to a plate lined with paper towels to drain any excess oil. Continue frying the remaining pancakes in batches until all the mixture is used.
  7. Serve the German Potato Pancakes warm with sour cream or applesauce on the side, if desired.
