GRAPE TOMATO BRUSCHETTA WITH HERBED VEGAN FETA

Ingredients:
For the Bruschetta:
2 cups grape tomatoes, halved
2 cloves garlic, minced
1/4 cup fresh basil, chopped
1 tablespoon balsamic vinegar
2 tablespoons extra-virgin olive oil
Salt and pepper to taste
For the Herbed Vegan Feta:
1 cup firm tofu, crumbled
2 tablespoons nutritional yeast
1 tablespoon lemon juice
1 tablespoon white wine vinegar
1 clove garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
For Serving:
Baguette or bread of your choice, sliced and toasted
Instructions:
Prepare the Bruschetta: In a bowl, combine the halved grape tomatoes, minced garlic, chopped basil, balsamic vinegar, and extra-virgin olive oil. Season with salt and pepper to taste. Toss the ingredients gently until well combined. Set aside to marinate while you prepare the Herbed Vegan Feta.
Make the Herbed Vegan Feta: In a separate bowl, crumble the firm tofu. Add nutritional yeast, lemon juice, white wine vinegar, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well until all the ingredients are evenly incorporated. Adjust the seasonings to taste.
Assemble the Bruschetta: Spread a generous amount of the Herbed Vegan Feta on each slice of toasted baguette.
Serve: Spoon the marinated grape tomato mixture over the herbed vegan feta-covered toasts.
Garnish (Optional) :Drizzle a little extra balsamic vinegar or olive oil on top. Garnish with additional fresh basil leaves.
