Greek-inspired potato and pea stew.

Ingredients
2-3lb small potatoes
1/2 bag of frozen peas
1 can of great northern beans, drained
2 Roma tomatoes
1/2 can of tomato paste
1 onion
5-7 cloves of garlic
Salt, pepper, oregano, dill, and lemon zest to taste
2tbsp hummus
Sauteed onions, then garlic and tomatoes, mixed in beans, tomato paste, zest, herbs, and seasoning. Added peas and potatoes cut in half, covered with water, and simmered until potatoes were tender. Stirred in hummus to make creamier.
