INGREDIENTS:
2 ripe mangoes, peeled and diced
1/2 cup coconut milk (or any non-dairy milk of your choice)
2-3 tablespoons agave syrup or maple syrup (adjust to taste)
1 teaspoon Tajin seasoning (adjust to taste, depending on how spicy you like it)
Juice of 1 lime
Tajin seasoning, for sprinkling
INSTRUCTIONS:
Prepare the Mango Puree:In a blender or food processor, combine the diced mangoes, coconut milk, agave syrup (or maple syrup), Tajin seasoning, and lime juice. Blend until smooth and well combined. Taste and adjust sweetness or spiciness as desired by adding more agave syrup or Tajin seasoning.
Fill Popsicle Molds:Pour the mango mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into the molds.
Freeze:Place the popsicle molds in the freezer and let them freeze for at least 4-6 hours, or until completely frozen.
Serve:Once frozen, remove the popsicles from the molds by running them under warm water for a few seconds. Gently pull the popsicles out of the molds. Sprinkle a little more Tajin seasoning over the popsicles just before serving, if desired, for an extra kick.

TIPS:
If you prefer a smoother texture, strain the mango puree through a fine mesh sieve before pouring into the molds to remove any fibers.
You can adjust the sweetness by using more or less agave syrup or maple syrup.
Tajin seasoning can be found in most grocery stores in the spice aisle or Mexican food section. Adjust the amount to your taste preference—it adds a nice spicy, tangy flavor to the sweet mango popsicles.
