Healthy Chicken Salad with Apples & Cranberries

Ingredients:

For the Salad:
  • 2 cups cooked and shredded chicken breast (skinless)
  • 1 medium apple, cored and diced (choose a crisp variety like Honeycrisp or Granny Smith)
  • 1/2 cup dried cranberries (unsweetened or sweetened, adjust for points)
  • 1/2 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/4 cup chopped walnuts or almonds (optional for added crunch)
  • Fresh mixed greens or spinach (for serving)
For the Dressing:
  • 3 tablespoons non-fat Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup (adjust for points)
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the shredded chicken, diced apple, dried cranberries, chopped celery, red onion, and nuts if using.
  2. In a separate small bowl, whisk together the non-fat Greek yogurt, Dijon mustard, honey or maple syrup, apple cider vinegar, salt, and pepper to create the dressing.
  3. Pour the dressing over the chicken and apple mixture. Gently toss until all ingredients are well coated.
  4. Serve the chicken salad over a bed of fresh mixed greens or spinach.
